The skillful selection of the finest beef cuts, topside without cup (punta d’anca) first of all, masterfully trimmed and seasoned to perfection using a unique blend of natural flavorings, are intrinsic to ancient secret recipes. Salted meat is massaged according and cuts are left to age at just, the right temperature and humidity, in order to complete this legacy steeped in local tradition.

Bresaola della Valtellina PGI presents a firm and elastic consistence, a red uniform colour and occasional white fat lines. When cut, Bresaola is compact and without splits; fragrance is delicate and slightly aromatic, taste pleasant, slightly savoury, never sour.

From a nutritional point of view, Bresaola della Valtellina PGI is the light deli meat par excellence: it is low in fat, rich in protein and a good source of B vitamins, especially B1, B6 and B12. It also provides a good amount of minerals such as iron, zinc, copper, magnesium and phosphorus. To produce Bresaola della Valtellina PGI, certified producers use only the finest boneless bovine thighs, usually the punta d’anca (the topside without the adductor muscle) strictly selected both from European and all over the world breeding. Organoleptic features: consistence: firm, elastic; aspect, when cut: compact and without splits; colour: lean meat: regularly red, slightly darker on the edge; fat: white; scent: delicate, slightly aromatic; taste: pleasant, slightly savoury, never sour.

Production technique

The processing steps must follow strict rules which guarantees the authenticity of the product and respect for traditional processing. Production starts with a careful selection and skillful trimming cuts of meat.

The next stage is the dry salting that contributes to give the typical aroma to the product. Meat is sprinkled with a moderate amount of sodium chloride and natural flavors. Can be added to wine, spices, aromatic plants, sugar (with the aim of encouraging microbial phenomena responsible for much of the aging of the product), nitrites and nitrates of sodium and/or potassium, ascorbic acid and its sodium salt. Thanks to the wise dosage of spices used, the product begins to acquire its own personality, with nuances of taste and smell different from manufacturer to manufacturer.

Salting, which has a duration of not less than 10 days, is interrupted by operation of massage, cd. churning, to allow the uniform migration of the salt and spices into the meat. Given the favorable climatic conditions of the production area, has allowed natural ventilation and exposure to moisture. The Bresaola della Valtellina is packaged in whole pieces or already sliced. The slicing and packaging steps must be performed exclusively in the production area by certified producers.
